<p style="text-align: justify;"><strong>Hanno origine dalla tradizione della cucina povera i </strong><a href="http://www.tortealcioccolato.com/2010/12/06/dolce-pane-uvetta-crema-cioccolato/"><strong>pani</strong></a><strong> dolci di natale, tra i quali va inserito il pandolce genovese</strong>. I <a href="http://www.tortealcioccolato.com/2010/10/21/souffle-di-pane-allo-zenzero/">pani</a> dolci altro non erano inizialmente che dei semplici pani arricchiti con altri ingredienti in occasione delle feste. Poi con il passare del tempo sono diventati dei dolci a tutti gli effetti.<strong> Il pandolce per esempio contiene uvetta, pinoli, cedro candito, semi di anice ed acqua di fiori di arancio. </strong></p>
<p style="text-align: justify;"><strong>Il </strong><a href="http://www.tortealcioccolato.com/2010/08/05/pan-di-spezie-cioccolato/"><strong>pandolce</strong></a><strong> essendo un dolce lievitato prevede una doppia e lunga lievitazione: la prima, quella dell&#8217;impasto ottenuto con farina acqua e lievito, dura 6 ore.</strong> Trascorso questo tempo all&#8217;impasto andranno aggiunti gli ingredienti rimanenti lavorando per bene in modo che tutti siano amalgamati perfettamente. <strong>L&#8217;impasto ottenuto andrà diviso in due, andranno formati due pani e conservati sulla placca del forno avvolti in un canovaccio e lasciati lievitare per altre 12 ore (ecco la seconda lievitazione). </strong></p>

<p style="text-align: justify;"><span style="color: #800000;"><strong>PREPARAZIONE: </strong></span></p>
<p style="text-align: justify;">Prendete la <a href="http://www.tortealcioccolato.com/?s=farina&amp;x=0&amp;y=0" target="_self">farina</a> e preparate la classica fontana con uova, zucchero,  burro, la scorza di limone grattuggiata, il limoncello e un pizzico di sale e impastate per bene tutti insieme gli ingredienti. Una volta ottenuto un&#8217;impasto liscio e omogeneo formate una palla e lasciatela riposare per 30 minuti.</p>
<p style="text-align: justify;">Una volta fatto impastate ancora un pochino e poi ricavate delle palle di pasta, rullateli un pò sul piano da lavoro e formate tanti bastoncioni spessi circa 1 cm. Tagliate quindi questi bastoncini in tanti dadini e poneteli su un piano infarinato.</p>
<p style="text-align: justify;">Versate l&#8217;olio in una pentola, fatelo scaldare e poi pian  piano versateci i dadini di pasta eliminati dalla farina in eccesso. Toglieteli quando saranno gonfi e dorati e poneteli su un paiatto con della carta per far assorbire l&#8217;olio.</p>
